Our hens have been laying eggs for over 6 months and I don&#8217;t think they will ever get old given the fresh eggs they have every day. Going outside, collecting some warm eggs from nest boxes and bringing them to the kitchen still feels a little magical.<\/p>\n<p>Now that I&#8217;m using these tips in real life, I wanted to refresh this post with what I&#8217;ve learned along the way. Farm-fresh eggs are still one of my favorite foods to have on hand. They&#8217;re versatile, packed with protein, and absolutely satisfying, especially when they come from your own backyard flock.<\/p>\n<p>Eggs are some of the best protein sources you can find with their versatility and adaptability to many protein-rich snacks and meals. However, not all eggs are created equal. I believe that any egg is better than no egg, but there are some differences between them.<\/p>\n<p>Store-bought eggs are improving in offering higher quality varieties, but farm-fresh eggs are something special. In general, farm-fresh eggs are more delicious and have brighter yolks than their store-bought counterparts. Whether you have your own backyard flock, or you&#8217;re lucky enough to know someone on the street who sells farm-fresh eggs, I strongly recommend finding some and seeing if you can taste the difference for yourself.<\/p>\n<p>Farm fresh eggs are much healthier for you, with vibrant yellow yolks and bright egg whites. This is because most farm-fresh eggs come from hens that are allowed to make their own food, resulting in eggs that have more nutrients. I always laugh when I see the message &#8220;100% vegetarian food&#8221; on some egg cartons because chickens are not vegetarian. Their varied diet includes insects and grubs that help add nutrients to their eggs.<\/p>\n<p>Farm-fresh eggs have different storage requirements than store-bought eggs. Here are some tips to help you store your eggs so that when you eat them they are as fresh as they were when you collected the eggs from your backyard flock&#8217;s nest boxes.<\/p>\n<h3 class=\"wp-block-heading\" id=\"h-unwashed-eggs-are-best-stored-at-room-temperature\">It is best to store unwashed eggs at room temperature.<\/h3>\n<p>Freshly laid eggs come naturally <strong>protective layer<\/strong> On the shell, which is often called a bloom. That layer helps mold the inside of the egg, which is why many people like to leave clean eggs unwashed until they&#8217;re ready to use them.<\/p>\n<p>Here&#8217;s what I do now:<\/p>\n<ul class=\"wp-block-list\">\n<li>When I collect eggs I check them and throw away any that have cracked. If the shell is broken, bacteria can enter more easily and the egg may not hatch. <strong>safe to eat<\/strong>.<\/li>\n<li>If there is even a little dirt on the egg, I dry it with a brush instead of washing it right away.<\/li>\n<li>If I know I will be storing the eggs for a long time, I prefer refrigeration because it helps the eggs expand. <strong>shelf life<\/strong> And keeps storage simple. The FDA says eggs should be stored immediately in a clean refrigerator at 40\u00b0F or below.<\/li>\n<\/ul>\n<h3 class=\"wp-block-heading\" id=\"h-how-to-properly-clean-freshly-laid-eggs\">How to clean freshly laid eggs properly<\/h3>\n<p>Sometimes the egg is dirty or so dirty that dry brushing cannot cut it. In that case, wash only those eggs that you need to wash.<\/p>\n<p>Some useful tips:<\/p>\n<ul class=\"wp-block-list\">\n<li>Use <strong>hot water<\/strong>not cold. The FDA recommends keeping eggs in a clean refrigerator at or below 40\u00b0F and storing them in their original carton for best quality.<\/p>\n<p>Some practical tips that helped me:<\/p>\n<ul class=\"wp-block-list\">\n<li>Keep them in a carton instead of open in the fridge so they stay safe and make it easier to date them.<\/li>\n<li>Place these in the main body of the fridge, not on the door, where temperature fluctuations are more likely to occur. This helps in maintaining freshness for a long time. The FDA specifically recommends storing eggs in their original carton in the refrigerator.<\/li>\n<li>If you want to be extra organized, place them down on the narrow end. It&#8217;s a small thing, but many backyard chicken raisers swear by it to help keep their quality longer, and it also makes the compartments look cleaner.<\/li>\n<\/ul>\n<h3 class=\"wp-block-heading\" id=\"h-keep-track-of-your-eggs-to-use-the-oldest-eggs-first\">Keep track of your eggs to use the oldest eggs first<\/h3>\n<p>It is helpful to have a system that will keep track of the age of your eggs. This allows you to use your oldest eggs first. There are a few ways you can store fresh eggs that will take care of the age of your eggs. Which option you choose will depend on how many eggs you have and how quickly your family eats this protein-rich food.<\/p>\n<ul class=\"wp-block-list\">\n<li>Find \u2013 or make \u2013 a countertop egg storage rack. <a rel=\"noreferrer noopener nofollow\" target=\"_blank\" href=\"https:\/\/amzn.to\/4cefKLn\">egg laying<\/a> They are shaped like a spiral, so the oldest egg is at the back, and the newer eggs slide to the front. You can also find wooden tray options that use the same system.<\/li>\n<li>Use a permanent marker to label the egg cartons with the day of the week you collected your eggs. If a day is assigned to each egg carton you will know exactly when your eggs were collected.<\/li>\n<li>Write the date of collecting the eggs with a pencil directly on the shell! Markers and pens will penetrate the absorbent egg shells, but pencil marks will sit on the surface of the shell so you can easily read what is written.<\/li>\n<\/ul>\n<h2 class=\"wp-block-heading\">Some additional tips I&#8217;ve learned since getting chickens<\/h2>\n<p>Now that we&#8217;re collecting eggs regularly, a few small habits make a big difference.<\/p>\n<p>First, I try to collect eggs consistently rather than leaving them in the nest box for too long. The cleaner they are when they come in, the less I need to wash them later.<\/p>\n<p>Second, if I want to stay organized I write the date on the cans or the collection date on the shell in pencil. When you suddenly have a lot of eggs, it becomes more important to use the oldest eggs first.<\/p>\n<p>Third, I&#8217;ve learned that beautiful storage is only helpful if I&#8217;ll actually use it.
