    The whole family will love this dinner recipe that can be prepared in less than an hour. Broccoli and Cheese Stuffed Chicken Breasts. After frying and cooking, each stuffed chicken breast remains moist on the inside with a nice crisp on the outside.

    These stuffed chicken breasts were inspired by the frozen stuffed chicken that my mom used to buy when we were kids. I remember they were pre-baked and pre-packaged and all you had to do was thaw them and cook! They were oozing cheese and were delicious. These are a homemade, better-for-you alternative to that frozen dinner. I hope you love this easy dinner as much as me and my family do ❤️.

    If you’re planning dinner, mix things up with this protein-rich Stuffed Chicken Breast recipe. Each breast is coated with a dry rub, filled with creamy and cheesy broccoli stuffing, and baked until golden perfection.

    Whenever I make our stuffed chicken (or stuffed pork chops) recipes, I’m always amazed at how simple they are to make yet how fancy they look. Stuffed chicken breasts are impressive enough for a celebration meal and simple enough for weeknight dinners. No matter the occasion, these chicken breasts are packed with flavor and cheesy goodness that everyone enjoys!

    Materials you need

    Chicken and Dry Rub

    • boneless, skinless chicken breasts (This recipe makes 4).
    • dry rub spices Which includes garlic powder, chili powder, dry oregano, red chili pieces, salt and black pepper.
    • olive oil (or avocado oil).

    Broccoli and Paneer Stuffing

    • i like to use Shredded Cheddar CheeseBut feel free to use shredded Colby Jack, white cheddar, or even a Mexican blend.
    • any kind of plain Greek yogurt.
    • full fat cream cheese For best taste and texture.
    • fresh minced or grated Garlic.
    • fresh (not frozen!) chopped broccoli florets.

    Cut each chicken breast in half lengthwise, leaving one side of the chicken breast attached to form a flap. Be sure to sprinkle the seasoning all over the chicken breasts, including the flaps.

    Definitely! Follow the recipe through step 8. Cover and refrigerate stuffed raw chicken breasts for up to 8 hours. When ready to serve, continue as directed.

    Let the chicken breasts cool completely, place in an airtight container and refrigerate for up to 3 days.

    Once the chicken breasts are cooked, let them cool completely before wrapping each breast tightly in plastic wrap and a layer of foil. Freeze for up to 3 months.

    Make Stuffed Chicken Breasts a Complete Meal:

    Chicken Breasts Stuffed with Broccoli and Cheese in a Cast Iron Skillet.

    • Preheat oven to 375ºF.

    • Prepare the spice rub. In a small bowl, add the garlic powder, chili powder, dried oregano, red chili pieces, salt, and pepper. Mix with a spoon and keep aside.

    • Place the chicken breasts on a cutting board and use a sharp knife to cut the chicken in half lengthwise, leaving the chicken breasts attached, but leaving a flap.

    • Sprinkle seasoning on both sides of chicken breasts, including the flaps.

    • Add the cheddar cheese, Greek yogurt, cream cheese, and minced garlic to a large bowl and mix until combined.

    • Next, add the chopped broccoli to the Greek yogurt mixture and mix everything together until the broccoli is coated in the Greek yogurt sauce.

    • Divide broccoli mixture into four parts.

    • Place the chicken breasts in the center of the flap and fill with 1/4 of the broccoli mixture. Close the flaps and secure both sides of the chicken breast with 2-3 or more toothpicks until it sticks together. Reserve the broccoli cheese filling. Repeat with each chicken breast.

    • Heat a large cast iron skillet over medium/high heat. Add olive oil. When the olive oil begins to smell, add the stuffed chicken breasts to the pan. Fry for 2-3 minutes on each side until brown.

    • Carefully place the cast iron skillet into the oven (be careful, the handle may be hot) and bake at 375ºF for 30 minutes, flipping halfway through.

    • Use a meat thermometer to check the internal temperature of the chicken breasts. Make sure it is at least 165ºF before taking it out of the oven. Rest for at least 5 minutes before eating.

    • storage: Let the chicken breasts cool completely, place in an airtight container and refrigerate for up to 5 days.
    • Freezing Instructions: Once the chicken breasts are cooked, let them cool completely before wrapping each breast tightly in plastic wrap and a layer of foil. Freeze for up to 3 months.
    • Dry Rubbing: Feel free to replace all the dry spices with 2 tablespoons chicken masala. That’s it for most of our chicken recipes!
