    • Cook brown rice according to package directions. Fluff with a fork and keep warm.

    • In a dry pan on medium flame, dry roast the chopped almonds for 2-3 minutes until golden and aromatic. Cancel.

    • In a large skillet, heat 1 tablespoon olive oil over medium heat.Add chopped kale and cook until softened, 3-5 minutes.
    • In a small bowl, whisk together olive oil, vinegar or lemon juice, Dijon mustard, honey, salt, and pepper.

    • In a large bowl, combine hot brown rice, roasted kale and dried cranberries. Drizzle the vinaigrette over the top and toss to combine.
