    • Heat olive oil in a pot on medium flame. – Add chopped onion and fry 4-5 minutes Until soft. Stir in quinoa and broth. Boil. Cover, reduce flame and cook on low flame 20 minutesOr until the liquid is absorbed.

    • In a small bowl, whisk together the olive oil, garlic, lemon peel and juice, maple syrup, cumin, salt and pepper.

    • When the quinoa is cooked, fluff it with a fork. Mix black beans and corn. Pour dressing over mixture and toss to combine.

    • Top with fresh coriander or parsley. Serve hot or cold before serving.
