Heat olive oil in a pot on medium flame. – Add chopped onion and fry 4-5 minutes Until soft. Stir in quinoa and broth. Boil. Cover, reduce flame and cook on low flame 20 minutesOr until the liquid is absorbed.

In a small bowl, whisk together the olive oil, garlic, lemon peel and juice, maple syrup, cumin, salt and pepper.
